You’ll see the duo eating classic pasta dishes in Rome and making fettuccine in Tuscany and we want in on the action too! So, to help you get started, here is my best recipe for Basic Pasta Dough.

What Are the Basic Ingredients For Fresh Pasta Dough?

Pasta is made from a combination of eggs, oil and flour mixed into a pliable dough that is kneaded, rested, rolled and cut. As with all things Italian, quality ingredients are key to making the perfect pasta.

Although Italian 00 flour makes the silkiest pasta; all-purpose flour is most widely used by home cooks. Bob’s Red Mill All Purpose Organic is what I use. When it comes to pasta, making olive oil is another important ingredient and Tuscan oil from Poggio Cappiano is the one I prefer.

Although pasta can easily be made by hand (with a rolling pin, the authentic Italian way), a good food processor or stand mixer makes the process simple. So I’ve listed out those methods below.

How To Make Pasta Dough in a Food Processor:

This is my preferred way to make homemade pasta since it requires little effort. All of the ingredients get added to the bowl of a food processor and are pulsed for a few seconds until they come together. Turn the dough out onto the counter and gently knead for a minute or two until a smooth ball is formed. Wrap the dough tightly in plastic wrap and let it rest at room temperature for 30 minutes. Use immediately or refrigerate for up to one day.

How To Make Pasta Dough in a Stand Mixer:

Combine all of your ingredients in the bowl of a stand mixer. Using the dough hook, mix and knead the dough for 8-10 minutes on low speed until it is smooth and elastic. Form the dough into a ball with your hands, wrap tightly in plastic wrap and let the dough rest at room temperature for 30 minutes.

Homemade pasta is worth every minute it takes to make. I suggest mixing  yourself a spritz cocktail and enjoy the pasta making experience.

Basic Pasta Dough

Ingredients

  • 3½ to 4 cups all-purpose flour
  • 4 extra-large eggs
  • ½ tsp extra-virgin olive oil

Directions

  1. Mound 3 ½ cups of the flour in the center of a large wooden cutting board. Make a well in the middle of the flour and add the eggs and olive oil. Using a fork, beat together the eggs and oil and begin to incorporate the flour, starting with the inner rim of the well. As you expand the well, keep pushing the flour up from the base of the mound to retain the well shape.

  2. The dough will come together when half of the flour is incorporated. At this point, start kneading the dough with both hands, using the palms of your hands.

  3. Once there is a cohesive mass, remove the dough from the board and scrape up and discard any leftover bits. Lightly reflour the board and continue kneading for 6 more minutes. The dough should be elastic and a little sticky.

  4. Wrap the dough in plastic and allow to rest for 30 minutes at room temperature.

  5. Roll or shape as desired.
