If you’ve been wondering why there’s lines stretching from a Babylon alley onto Deer Park Avenue, you’re not alone.
Wonder no more. These people have been lining up at the window of the new Shuga Pie Cake Shop.
Then they walk away devouring vegan shuga pies by the stack.
The shop’s owners coined the term shuga pie.
“It’s our version of a whoopie pie, so all the cakes and the fillings for our decorative cakes, we make little cake sandwiches,” said Shuga Pie Cake Shop co-owner Micheline Cummings. “It’s a great way to get a treat and you don’t have to get an over-the-top-custom cake.”
The cake shop is located at 135 Deer Park Ave., Unit 3, tucked away in the alley between Swell Taco and Fitness Incentive. It opened Dec. 11.
Cummings and her partner, Terry Haughy, both have extensive backgrounds in business and baking.
But, as Cummings tells it, the industry of extravagant cakes takes its toll.
“After almost 20 years of decorating and sculpting, your hands need a break,” she said. “These are fun, these are easy, and we can be creative with a bunch of different flavors.”
But going small is paying off. Their little shuga pies often sell out.
They’re definitely not selling just to vegans, either.
“You can’t tell it’s vegan,” Cummings said. “It just tastes like cake.”
The partners make giant baking mixes of dry ingredients in the cake shop, then take it to the Kitchen Co-op in Amityville, where all baking and preparation is done off-site. For COVID safety reasons, patrons can only order shuga pies at the shop’s walk-up window.
There’s a variety of shuga pie flavors, including red velvet, fun fetti, cookies and cream, espresso, and the original: vanilla creme sandwiched between two rounded chocolate cake tops.
During the winter season, the shop is open Thursdays from 1 p.m. to 6 p.m., Fridays from 12 p.m. to 6 p.m., and Saturdays from 11 a.m. to 6 p.m.
Cummings said once they settle more into the business, they will consider expanding their hours with the warmer months.
“It’s been great and I think we’re too tired to really take it in yet,” Cummings joked.
