Apple pie is a tradition for many families in our country. It is usually a must when entertaining during the holidays, and it is known around the world as America’s cherished dessert.
Opal apple pie is a summertime take on this well-known dessert. It’s lighter than the usual pie; and, the coconut-opal apple combination makes one think they are enjoying a tropical dessert.
Since this pie is made with coconut flour, it is gluten free. However, be sure to check that all other purchased ingredients are gluten free if you plan to make this pie for celiac needs.
Coconut flour is a delicious substitute for white flour. Though some find gluten free flours hard to roll because they are prone to crumbling, simply press the dough back together. It doesn’t have to look perfect to taste delectable.
Opal apples are naturally sweet apples, like the golden delicious apple. This allows you to cut down on added sugars, making for a more nutritional finished product.
In addition to cutting down on sugars with naturally sweet fruits, the use of spices such as cinnamon will yield the same result — lots of flavor without added sugar.

Opal Apple Pie Crust (makes one shell)
¾ cup coconut flour
½ cup coconut oil, melted
¼ teaspoon salt
2 tablespoons orange blossom honey
Olive oil spray
4-5 Opal apples, peeled, cored and sliced
1 teaspoon orange blossom honey
½ teaspoon cinnamon
½ cup sweetened coconut flakes
2 tablespoons brown sugar
2 tablespoons coconut flour
1 teaspoon cinnamon
Pinch of salt
¼ cup coconut oil, melted
Preheat oven to 420 degrees.
In a large mixing bowl combine the ingredients for the crust. Use a silicone spatula or wooden spoon to mix. By hand, form the dough into a ball.
Lightly grease a pie pan with olive oil spray. Press the dough into the pie pan by hand. Because coconut flour is gluten free, some find it more of a challenge to roll out, and it may crumble slightly. Simply press it back together. Shape the crust to fit your pie pan.
Prick the crust with a fork in about 4-5 places, and place in preheated oven for about 4 minutes. Remove from oven and set aside.
Now, in a small mixing bowl combine all ingredients for the topping except the coconut oil. Measure ¼ cup of coconut oil into a glass, or microwavable safe measuring cup, and place in microwave. Do not melt yet.
Place the Opal apples in a large mixing bowl. Drizzle the honey and sprinkle the cinnamon evenly over the apples. Gently toss to coat.
Spoon the apple mixture atop the crust. Melt the coconut oil in the microwave; this only takes about 30 seconds.
Add the melted coconut oil to the topping mixture and stir. Evenly distribute the topping over the apples.
Place foil over the entire pie and place in oven. Bake for 30-35 minutes. Remove foil the last five minutes of baking to lightly brown topping. Serve with low-fat vanilla ice cream or frozen vanilla yogurt.
