Pie crust: In large bowl, sift together flour, sugar and salt. With a pastry blender or two knives, cut in lard or shortening until mixture resembles coarse crumbs. In another bowl, mix together egg, vinegar and water. Add to flour mixture. Mix until dough is moistened enough so it holds together. Refrigerate till just before you’re ready to assemble the pie. When it is chilled and you’re ready to put pie together, separate dough into thirds, and roll dough out on a lightly floured surface to about ⅛ inch thick.
