Pasta is a definite crowd pleaser if cooked the right way, however often, it is either overcooked or made in a sauce that may have turned gluey because of when you put the pasta into the sauce. Pasta is an easy to make dish but requires attention to detail, like the temperature of the ingredients, the saltiness of the pasta water, resting time for the dough and so on. However you will find that with a little bit of practice and a lot of patience you can made delicious and fresh pasta at home in no time. Here are some useful tips and tricks that will help you achieve the perfect texture and consistency in all you pasta endeavours, read on:

  • Ensure that all your raw ingredients to make your fresh pasta including the flour, egg, salt and water are always at room temperature while you make your pasta dough as a difference in temperature could lead to the dough becoming clumpy and hard.
  • Combine the eggs and flour first before you add water or extra flour to the pasta dough mixture. After you are done mixing all the ingredients add more water or flour depending on whether the mixture is too dry or wet, respectively. Do not add too much of either, go with 1 tablespoon at a time and gradually add more as you need.
  • Allow you dough to rest for some time at room temperature if you wish to cook it immediately, if you refrigerate the dough it will need to come to be at room temperature before being rolled into the desired shape. The changing temperature does have an effect on the consistency and texture of the pasta as it affects the gluten structure of the dough.
  • Salt your pasta water so that it is as salty as the sea, once the water is boiling throw in your pasta and stir it with a ladle this will make sure that your pasta doesn't stick together or to the sides/bottom of the pan. Keep stirring your pasta from time to time while its cooking.
  • Drain the water from the pasta but not completely as the lack of water will cause your pasta to stick together upon cooling.
  • Always add warm pasta to warm sauce, immediately. Never the other way round, in order to avoid sticky and gluey pasta.
  • One can always make the pasta healthier by switching out all purpose flour with semolina or wheat flour.
  • To make your pasta healthier as well as more Instagrammable, add pureed beetroot or spinach to give it a beautiful colour as well as added flavour to the pasta dough.
  • You can also add loads of vegetables, fresh herbs and proteins like chicken, fish, tofu or vegan meatballs to your pasta. One can also switch out the cream and replace with Greek yogurt.
