Mobile, Birmingham and Huntsville pasta lovers will have a new restaurant to patronize in the future.

Restaurant chain Noodles and Company is looking to expand into north, central and south Alabama within the next year, according to John Ramsay, vice president of franchise sales for Noodles and Company. The three restaurants are a part of a larger effort to establish the brand in the south and southeast, where locations are few and far between.

The beginnings of the initiative began in the fall 2020, after the company fared well throughout the start of the COVID-19 pandemic.

“I call it ‘under the rainbow’ because we have restaurants in California, all the way through the Midwest and down into Florida, but there’s nothing underneath that rainbow,” Ramsay said. “That’s a big gap for us right now in terms of number of restaurants, so that’s why we’re focused there.”

Alabama is one of six states the chain is looking to expand into, according to a press release. Florida, Georgia, New Mexico, South Carolina and Texas are part of the company’s multi-unit franchise growth initiative.

According to Ramsay, Mobile, Birmingham and Huntsville would start out with one location each, but the hope is that the particular franchisee would be a local individual ultimately overseeing a few restaurants in a region.

For example, following the success of a Mobile location, that particular franchisee could also operate a location in Baldwin County, or in Pensacola.

The journey to becoming a franchisee begins on the company’s website, according to Ramsay. After an individual fills out the interest form, the journey to an open restaurant could be 18 months.

“It takes longer to find the right person,” Ramsay said.

Noodles and Company won’t have any special regional dishes because the menu is already easy to acclimate in each market, according to Ramsay. The chain has standard pasta fare, like spaghetti and meatballs and macaroni and cheese, but also offers “zoodles” (zucchini noodles) and pad thai.

“What we bring is a single restaurant that guests can come to and everybody gets satisfied with what they’re creating that night or that day for their meals,” Ramsay said.

All those reasons are also why Ramsay believes Noodles and Company will be a great addition to the state of Alabama, along with the rest of the south.

“Our menu is very easy to adapt to,” Ramsay said. “All the food is customizable and made to order. That’s the beauty of it.”
