If you’ve recently been on TikTok, then you know that vodka pasta is one of the biggest hits on the platform, and for a good reason.
The craze started when people were lining up at famous restaurants such asCarbone and Jon and Vinny’s for a plate of vodka pasta that could cost upwards of $32. TikTok users took it upon themselves to recreate this simple yet deliciously satisfying dish at home, and the trend gained more speed after supermodel Gigi Hadid shared her version on Instagram.
After seeing this pasta trend, I had to get in the kitchen and try it myself. I put my own spin on vodka pasta by making the recipe vegan, and it was a success. I was a little worried that the coconut milk would be overpowering and make the dish sweet, but it mimicked real cream and made the sauce very creamy.
The overall taste is great. For those of you who are scared to try vegan food, this is a good place to start. It is easy to make and even easier to enjoy. This dish is simple, satisfying, and you won’t feel heavy or lethargic after eating it.
Ingredients:
1 pound of pasta with ridges
¼ cup of a white onion, diced
4 cloves of garlic, minced
16 ounces of tomato paste
¼ cup of vodka, optional
1 cup of coconut milk, full fat
3 tablespoons of nutritional yeast
½ cup of pasta water reserved
Salt, pepper, crushed red pepper flakes, olive oil to taste
Basil to garnish

Instructions:

Bring a medium-sized pot of water to a boil with a handful of salt. Then add your pasta.

Cook pasta for one to two minutes less than directed on the box.

Once the pasta is cooked, drain the pot, but save some pasta water in a separate pot off to the side.

In a large saucepan, saute garlic and onions in olive oil on medium-low heat until they become translucent, then add red pepper flakes.

Add the tomato paste and cook until it turns dark red. Make sure to keep stirring so you don’t burn the garlic.

Add the vodka and continue stirring so that it cooks out.

Add the coconut milk, salt and pepper. Let it simmer until the sauce forms.

Mix in nutritional yeast.

Then, only a little bit at a time, add some of the pasta water, until the sauce is creamy.

Add your pasta to the sauce.

Top with basil and nutritional yeast, and enjoy!
