My Leader Yummy – Seafood Alfredo Pasta | Recipes - Leader Publications

During the weeks between Thanksgiving and Christmas, it sometimes may feel like a turkey and ham overload. If you’re craving something different, this recipe for Seafood Alfredo Pasta is a delicious solution.

The dish makes a tasty dinner for your family. It’s also a great option for a pre-Christmas potluck get-together since it adds festive holiday red and green colors – the imitation crab meat and peas – to your table.

Not only is this Seafood Alfredo Pasta delicious, but it doesn’t take a lot of time to prepare. Serve it with a Caesar salad and a slice of crusty bread slathered in butter and you will have a filling, delicious meal in no time.

SEAFOOD ALFREDO PASTA

3 cups uncooked farfalle (bow tie) pasta

2 garlic cloves, minced

3 tablespoons olive oil, divided

1 cup sliced, fresh mushrooms

8 ounces small scallops or cooked salad shrimp

8 ounces imitation crabmeat, flaked

1 (6.5-ounce) can minced clams, drained

1/2 cup frozen peas, thawed

1 tablespoon lemon juice

1/2 teaspoon black pepper

1 (16-ounce) jar Alfredo sauce

1 cup sour cream

1/2 cup grated Parmesan cheese

1/2 cup shredded Parmesan cheese (plus extra to sprinkle on top)

Cook pasta according to package directions. Meanwhile, in a large skillet, saute garlic in 1 tablespoon oil until tender, set aside.

In a smaller pan, lightly brown scallops and mushrooms in 2 tablespoons remaining oil just until cooked. (If using shrimp, it will take less time since its already cooked.) Add scallop/mushroom mixture to the sauteed garlic.

Add the imitation crab, clams, peas, lemon juice and pepper to above mixture. Cook and stir for 1-2 minutes.

Combine Alfredo sauce and sour cream and add to seafood mixture. Lightly stir in grated Parmesan cheese, until combined. Drain pasta and add to seafood/sauce mixture and cook on low heat and stir until heated through.

Sprinkle with shredded Parmesan cheese. You may want to sprinkle individual servings with additional shredded Parmesan cheese as well.
