R.T. of Garden Valley, who submitted this recipe says, “Salisbury Steak used to be one of the most popular entrees both at home and in restaurants. For some reason we’ve gotten away from it, opting for other main dishes. My family and I still love the way my mother used to prepare it, and I hope it will bring back memories for you, too.”

1 tablespoon prepared mustard, such as Gulden’s or dijon
2 teaspoons Worcestershire sauce
1 teaspoon prepared horseradish (optional)
1 egg

1 to 2 tablespoons oil
1/2 cup water

2. In another bowl lightly beat the egg. Add bread crumbs, onion, salt, pepper and 1/4 cup of the soup mixture.
3. Add beef and mix well. Shape into six patties. In a large skillet, heat oil over medium-high heat. Brown the patties on both sides; drain
4. Combine remaining soup mixture with water; pour over patties. Cover and cook over low heat for 15-20 minutes or until meat is no longer pink.
5. Remove patties to a serving platter; top with sauce.
Serve the meat patties and gravy over a bed of cooked noodles or mashed potatoes for a hearty and tasty meal. If you wish, the patties and gravy can be prepared ahead and reheated when it’s time for dinner.
Questions for the cook
J.N. of Pilot Hill asks:
Q: I’ve heard of dumplings but since I’m newly married and somewhat in the dark about preparing unfamiliar recipes I was wondering if you could tell me more about how they are used in cooking. I found a chicken and dumplings recipe I want to try but I’d like a bit more information on preparing them.
A: Dumplings are small or medium mounds of dough that are usually dropped into a liquid mixture such as soup or stew and cooked until done. The dough itself usually consists of flour, a small amount of salt and water. Some recipes offer them stuffed with meat or cheese mixtures. There are also dessert dumplings, which most often consist of a fruit mixture encased in a sweet pastry dough and baked. Some sweet dumplings are poached in a sweet sauce and served with cream.
A helpful hint
To prevent butter from over-browning in your pan add a little bit of lemon juice.
