An Ancient Grain Flour for Your Pie Crust - The New York Times

For the past 10 years, Cup4Cup — a company founded by the chef Thomas Keller — has been supplying bakers and cooks with an excellent gluten-free alternative to regular all-purpose flour. It has now added a blend of “ancient grains.” Like the company’s original flour, it can be used measure-for-measure in place of regular all-purpose so you can go gluten-free with those recipes for Thanksgiving pie. In this flour’s blend are oats, millet, cassava, tapioca, teff and buckwheat. It’s also dairy-free, so it is suitable for vegan baking.
