Grass-Fed Wagyu Steak Restaurant Headed to Meat-Loving Beverly Hills - Eater LA

A brand new steak restaurant named Matu (stylized as matū) is coming to Beverly Hills sometime next year, but don’t think this just another chop house with big booths and deep reds on the wine list. No, no: Matu comes by way of Jerry Greenberg (Sugarfish, Uovo, HiHo Cheeseburger) and a number of notable partners, and will serve 100 percent grass-fed wagyu on its menu.

The incoming Matu doesn’t have an opening date yet, but it does have an address: 239 S. Beverly Drive, in the thick of Beverly Hills. The restaurant, Greenberg tells Eater, will only serve dinner, and will feature a dramatic interior from Marmol Radziner, the design architect, with Kelly Architects on as the executive architect for the project. Given the current state of things, expect an outdoor dining setup as well when the restaurant opens at some point next year.

As for the menu, Greenberg says that Matu will focus exclusively on grass-fed wagyu from First Light Farm. First Light Steak Club’s Michael Odell and Lowell Sharron are on as partners in the project (Sharron is also a partner in Uovo and HiHo), as is private chef Scott Linder, Ryan Gianola (Hillstone Restaurant Group) and writer Mark Schatzker, author (among other things) of the book Steak.

For now, little else is known about the project, though construction is underway. The plan is to hopefully open in the first half of 2021, but with little idea of what the future holds in terms of the pandemic, indoor dining closures, and other public health issues, the details remain to be seen.
