WHAT'S COOKING? Kentucky pie and old fashion fudge - YourGV.com

This week I’m going to do some I hope you enjoy. A lady at the market has this pie. It is so good, but very rich.

KENTUCKY PIE

1 stick margarine, softened

1 cup sugar

2 eggs slightly beaten

½ cup flour

1 t. vanilla

1 (6 oz. pkg.) chocolate chips

1 cup broken pecans

1 unbaked pie shell

Cream margarine and sugar together, add eggs, flour and vanilla. Mix well, add chocolate chips and nuts. Pour into pie shell and bake at 325 degrees for one hour; serves six. 

OLD FASHION FUDGE (WITH BLACK WALNUTS)

2/3 cup milk

2 (1 oz. square) chocolate

2 cups sugar

1 T. light corn syrup

2 T. butter

½ cup black walnuts

1 t. vanilla

Scald milk. Melt chocolate in milk. Add sugar and corn syrup. Bring to a boil; cover and cook three minutes. Uncover and cook to a soft ball stage at 236 degrees, stirring frequently. Remove from heat. Add butter and nuts. Cool quickly. Add vanilla and beat until thick. Spread in greased pan. When firm, cut into 1-inch squares.
