One Pan Pasta Done in Under 10 Minutes! - KATU

One-Pan Pasta Primavera

Serves 4

  • - 12 ounces (340 g) dry spaghetti
  • - 3 large garlic cloves (15 g), thinly sliced
  • - 1 serrano pepper, seeds and white ribs removed, finely chopped
  • - 12 ounces (340 g) cherry tomatoes
  • - 1/2 cup (75 g) finely chopped red bell pepper (about 1/2 of a medium pepper)
  • - 1 medium head broccoli (about 2 cups / 115 g), coarsely chopped
  • - 6 asparagus spears (85 g), cut into 1/2-inch lengths
  • - 1/2 medium onion (165 g), finely chopped
  • - 6 cremini or white mushrooms (95 g), sliced
  • - 2 handfuls spinach (75 g), roughly chopped
  • - 2 teaspoons salt
  • - 1/4 teaspoon freshly ground black pepper
  • - 4 1/2 cups (1.06 L) water
  • - 1 handful (15 g) fresh basil leaves, cut into strips
  • - 1 1/2 ounces (about 1/3 cup / 43 g) pecorino romano cheese, grated, plus more for garnish

Place everything except the basil and cheese in a large, deep saucepan. Bring to a boil over medium-high heat, using tongs to toss often. Once boiling, continue to toss and cook for 9 minutes, until the liquid reduces and thickens to a sauce and the pasta is al dente. Add the basil and cheese, and continue tossing to combine. Serve immediately, topped with additional cheese, if desired, and enjoy!
