When the pandemic thwarted his plans to open his own restaurant, Josh Buckwald, the former sous chef at Rossoblu, pivoted. The result is Orso, an operation that brings soul to the ghost-kitchen concept with next-level pasta kits Buckwald delivers himself across the city.
The fresh noodles are textural marvels, and the Bolognese sauce is perfectly balanced and seasoned. But the DIY cacio e pepe is the real standout. Buckwald constructs orbs of compound butter with cheese and pepper that make prepping the simple-but-finicky Roman classic at home nearly foolproof.
