Sometimes old-fashioned recipes can become new again. I was going through some old cookbooks recently and ran across this recipe for an oatmeal pie that originated generations ago, but it is just as tasty today as it was back then.
If pecan pie is a favorite, this one will be a close second. The recipe calls for healthy oatmeal, coconut and only half the amount of pecans, or even walnuts, in place of the whole cup of nuts most pecan pie recipes call for.
The recipe also is great because you’re likely to have most of the ingredients in your pantry, so you can create this delicious dessert on the spur of the moment if you have a craving for something sweet, or if you need something tasty to serve unexpected guests. Either way, you will be sure to please those sweet cravings.
OLD-FASHIONED OATMEAL PIE
1/2 cup milk
2 eggs
1 cup sugar
1/2 stick margarine or butter, softened
3/4 cup dark corn syrup
3/4 cup quick oats
1 cup flaked coconut
1 tablespoon vanilla
1/2 cup nuts (pecans OR walnuts), chopped
1 unbaked pie shell
Place milk, eggs, sugar, margarine or butter, and syrup in bowl. Beat well. Add oats, coconut, vanilla and nuts.
Pour into pie shell. Bake at 350 degrees for 45 minutes or until filling is set.
